1. Run the entire outside of the bread under cold tap water for 2-3 seconds per side. You want the crust damp but not soaked. Don't worry—this seems counterintuitive, but it's essential. The water provides the moisture that will steam the interior.

2. Place the damp loaf directly on the middle oven rack. Don't wrap it. Don't use a pan. Direct heat on all sides is what creates that crisp crust.

3. Bake for 10-12 minutes. The exact time depends on loaf size. A whole boule needs 12 minutes; a half loaf needs 8-10 minutes.

4. Let it cool for 5 minutes before slicing. The interior will be steaming hot and the crumb structure needs a moment to set. Cutting too early releases all that revitalizing steam.

The result? A crackly, crisp crust and a soft, tender crumb that tastes remarkably close to fresh-baked. This method works because the water on the exterior creates steam in the oven heat, which penetrates the loaf and reverses starch retrogradation. The Damp Towel Technique

1. Wrap your stale slice in a damp (not dripping) clean kitchen towel.

2. Microwave on high for 10 seconds.

3. Immediately transfer to a toaster oven at 175°C (350°F) for 3-4 minutes.

The microwave + damp towel steams the slice and softens the crumb. The toaster oven crisps the exterior. You get a slice with fresh texture without the leathery toughness of straight toasting. This is perfect for bread that's too hard to toast normally without burning.

For Very Stale Bread: The Paper Bag Method

Freeze for long-term storage. Sourdough freezes exceptionally well. Slice before freezing, then toast individual slices straight from frozen. They'll taste bakery-fresh.
